Hi, Father, whenever I want to go veg, I generally go with Indian food. There is a whole wealth of vegetarian cuisine in Indian cooking. If I remember, I’ll post some recipes I use here.
In the meantime, try this recipe for pindang telur, or eggs in soya sauce. It’s an Indonesian dish that can be spicy, but you can control that by the amount of chillis you add. I’m not sure if you can find belacan (shrimp paste) over there, but I don’t think the dish will be affected too much without it. It’ll just be less salty.

Give it a go and let me know what you think of it. I like having it with rice, although I think it might also go well with short noodles or bread.
Here a vegetarian dish I tried out myself today.
Mushroom risotto with all kind of seeds and nuts served with stringbeans.
Saute your mushrooms and toast your seeds and nuts
You cook the risotto in bouillon and finish it of with a little cream
cook your stringbeans.
Mix the mushroom and nuts with the risotto and your dinner is ready.
I really enjoyed.
I picked up a Lenten cookbook at a used bookshop recently. Here is an eggplant recipe from this book.
Eggplant Istanbul
1/2 c salad oil
1 eggplant, peeled and cubed
1 onion, chopped fine
2 cloves garlic, crushed
2 tomatoes, peeled and cut in eighths
1 can tomato paste (usually 6 oz or 170 g)
Juice of 1 lemon
Salt to taste
Put oil, eggplant, and onion in saucepan and cook for 10 minutes. Add garlic, tomatoes, tomato paste, and juice of one lemon. Simmer for 15 minutes. Add salt to taste. Serve with lemon wedges or spoon over fluffy steamed rice and add an extra squeeze of lemon juice. Serves 6.
I probably would garnish with finely chopped parsley, or even adding a bit of basil will probably work fine for this if you need some colour. Enjoy!

Great episode! I also struggled yesterday with my fasting. I’m glad to know I’m not alone. I think the hardest time was after supper so I went to bed early!

I loved this episode! You inspired me to decide to give up my luxurious Nespresso (at home) for Lent, and instead drink Fairtrade filter-coffee out of my good ol’ coffee machine. I also give up lattes at coffee company or any coffee place outside of the home. I am going to donate the money I save to charity.
so let’s see: 2 nespresso a day= 35 eurocentsx2 x 40 days = 28 euro plus 3 eurox2= 6 euros x 7 calendar weeks= 42 euro, that makes: 70 euros worth of luxury coffee!!!!
Of course I’ll buy the filter coffee but I commit to donating 70 euros to charity anyway

My second day of fasting this Friday was a bit easier already. Practice makes perfect? I hope so
I do think fasting is a good practice for all kinds of reasons. But I question whether it is such a good idea when we are sick and/or already malnourished.
I have 40 years of clutter in one room that I have been ignoring. I decided to give it up. Every day during Lent I will work on removing something. By Holy Week I want it ready for a nice new coat of paint. This is tough. These are things I had when I was growing up? These are things that are my Moms and Dads. They have been gone for MANY years. I am 70. It is time to let go, to donate or recycle everything.
In addition, I am very impressed by your experience with fasting. I don’t thing I could do it. But I am trying to lose weight. Not very successfully, because I am to attached to food.

About kidney stones and diet. As someone who produces lots of them, like you do, I have been to a Nutrition Counselor at the hospital. If you produce Calcium Oxalate stones, like most people do, cutting down on beef is a good idea, but loading up on vegetables is not. Many veggies are very high in Oxalates and will add to your stone production. I suggest you google low and high oxalate vegetables and stay away from high ones like leafy green veggies. And of course drink, drink, drink. Good Luck.
